Paneer Rolls (Preparation Time: 20 minutes, Serves:2-3)

I am a food blogger so obviously I enjoy cooking. But every day is not the same. There are days when cooking is a chore. For such days I keep a few quick and easy recipes handy that don’t require much effort. These are a must when you have kids at home.
I prefer home cooked meals – even if prepared with some pre processed ingredients – over junk food. A little bit of preparation on the weekend makes weekdays more manageable. I chop and set aside onion, tomatoes, and cilantro. And then I usually prepare and keep chutneys, especially Imli and Dhania. I also stock a pack or two of frozen paranthas. All these preparations and stocks come in really handy on that lazy day. With very little effort I am able to fix a relatively nutritious meal for my family.

I do a lot of rolls/wraps – chicken, mushroom, paneer and potatoes. Today I am sharing a super quick recipe for paneer rolls. Just grab these ingredients and get set to Wrap and Roll…

Paneer 1.5 cups
Diced tomatoes 1/3 cup (I prefer Hunt’s brand)
Spring onions 1 cup; bulb to green ratio of 3 parts to 1
Garlic 2 cloves
Ginger 1/2 inch chopped
Salt to taste
Chilli powder ½ tsp
Tandoori masala 1 tsp
Garam masala ¼ tsp
Dhania powder ½ tsp
Dry mint power 1 tsp
Frozen Parathas
Imli Chutney
Dhania ki Chutney
Finely chopped cilantro
Lemon juice to taste
Chopped onion ½ cup
Oil to sauté

  • Heat oil in a pan and sauté finely chopped garlic and ginger until light brown

  • Add spring onions and sauté for 5-6 minutes

  • Add tomatoes and spices and cook for 7-8 minutes

  • Add paneer (I use homemade paneer) and cook for 2 minutes

  • Add chopped cilantro and take the pan off the heat

  • Mix chopped onions, lemon juice, salt and chilli powder in a bowl and set aside

  • Thaw and heat the frozen parathas (I use Kawaan brand); feel free to use fresh paranthas or roomali rotis if you prefer

  • Spread Imli and Dhania chutney on a parantha; add the cooked paneer mix and sprinkle chopped onion mix

  • Wrap and enjoy
