Hello people! This is my first ever contact with a blog as far as writing is concerned… and its exciting! I had promised my dear friend, Ishita to share this recipe on her blog. This is something I used to make pretty often for my baby a few months back, from the time he was 9 months old. It is my own version of Risotto for babies, which is very nutritious, tastes good, easy to cook and most importantly baby friendly.
- A small bowl of cooked rice
- About 10 leaves of spinach, finely chopped
- A small cube of crushed Paneer
- Half cup milk
- A little ghee/butter
- Salt to taste
- Black/white pepper to taste
- Oregano/mixed herbs (optional -if your baby is experimental with his taste buds)
- A few chopped olives (optional -if your baby is experimental with his taste buds)
Steps
- Sauté spinach in butter/ghee till it is nice and crisp and remove it from the pan
- Using the same pan, boil milk, add rice to that and let it cook a bit more in milk
- Throw in the spinach
- Let it cook for a minute
- Add salt, pepper, olives, paneer and herbs in it
- Cook for half a minute more
Voila! An Indian version of baby risotto is ready for you to serve!
P.S.
- For chicken variant, you could put 1 spoon boiled and minced chicken at the time of adding spinach in milk rice mixture

You could replace rice with vermicelli or pasta
